Built in the tradition of a Great Adirondack Camp, The Point marries opulent authenticity with epicurean amenities and a secluded, relaxing wilderness.Job Description:The kitchen is described by many as the heart of the property. Line cooks at The Point work under our Executive Chef and Sous Chef and are vital in the success of the property. An affable, energetic personality is a must. Position is a seasonal position with the prospect of a yearround opportunity. It may require fulltime hours and will require weekend and holiday availability.Experience:Knowledge of cooking techniques such as braising, baking, roasting (oven or rotating spit) and high level skillet/saut workKnowledge of all kitchen equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, roasters and steam kettlesAbility to inventory product, read menus and estimate food requirements to create a production planKnowledge of basic butcheringMaintains standards and specifications related to food preparation and food handling on a daily basis, understands measurement requirementsKnowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP (Hazard Analysis and Critical Control Points) while understanding the science in cooking temperaturesResponsible for checking and maintaining proper temperatures throughout preparation, cooling, holding and serving of food items including adjusting thermostat controls to regulate temperaturesObserves and tests food being cooked by tasting, smelling and piercing with cooking utensil to determine that food is cooked properly, according to specificationsCleans kitchen equipmentAbility to handle special dietary requests and to work with guests requiring special requests due to dietary concernsMay prepare sauces a la minute using advanced sauce preparation techniquesPrepares confits and compotesCreates seasonings, cures and rubsMay bone and clean shellfish, cut, trim or grind meats, fish or poultryMust demonstrate advanced culinary technical skills required in food preparation and use of kitchen equipment for a fine dining restaurantMust demonstrate ability to present and discuss menu item preparation with Dinner Cooks, Order/Grill Cooks and GuestsIdeal candidates would:Have permission to work in the United StatesBe driven to create memorable experiencesProvide exemplary serviceBe able to work well under pressure in an environment unique in the hospitality industryBe able to communicate well using verbal and written skillsBe reliable and detail orientedBe hardworking and committed to their career
